Ingredients

    6 large eggs
    1/2 cup skim milk
    1 tbsp sugar
    1/2 tsp cinnamon
    1 tsp vanilla extract

    2 large bananas, sliced
    4 large figs
    6 tbsp yogurt cheese (or cream cheese, brie, or cheese of choice)

Directions

Preheat oven to 350 degrees F.

Whisk together the eggs, milk, sugar, cinnamon and vanilla. Set aside.

Grease a 10" oven and stove-safe dish (I use a glass skillet; cast iron would work, too). Layer the sliced banana on the bottom and pour the egg mixture over it. Turn to med-high heat on stove. Do not stir; you are simply speeding up the baking process by beginning to cook the egg as you assemble the frittata. (IF YOU DO NOT HAVE A STOVE AND OVEN-SAFE PAN, YOU CAN SKIP THIS STEP, BUT THE FRITTATA WILL PROBABLY TAKE LONGER TO BAKE. PERHAPS 45 MINS TOTAL OR SO.)

Slice the figs in half and arrange on top. Drop your cheese by spoonfuls.

Allow to heat for a few minutes, then move to oven. Bake 30 minutes. Allow to sit 10 minutes before slicing.
