Introduction

These SPLENDID SPLENDA Cookies are my own recipe. I make it originally with 1.5 cube Sticks Nucoa but cut that to 1 cube (8 Tablespoons) and .25 cup Unsweetened Applesauce instead. This recipe made with just Nucoa made small very round cookies. I think with the Applesauce and cutting the nucoa it will perform nicely and give a better "spread" consistency upon baking, less calories, and more like the 2&1/2" cookies we love so well. Ingredients

    2.5 cups White Flour
    1 Teaspoon Baking Powder
    1/2 Teaspoon Baking Soda
    1 Teaspoon Salt

    1 cube-stick Nucoa
    2 fresh Large Eggs
    3/4 cup Splenda
    1/4 cup + 2 Tbspns Splenda Brown Sugar
    2 to 4 tspns Vanilla (imitation)
    1/4 cup applesauce

    1 Cup Walnuts
    2 Cups semi-sweet Chocolate Chips


Directions

Mix Flour, Baking Powder, Soda and Salt together in large bowl.
In Another bowl: On low speed with electric mixer (or a fork) mix egg well and add sugars, vanilla, applesauce. Take softened nucoa and blend in with your mixer or a wooden spoon so the consistency is thoroughly mixed.

Pour egg mixture into flour mixture and mix together. Then add walnuts and chocolate chips.

Form into balls about a dozen per baking sheet on lightly sprayed foil and bake about 9 to 11 minutes in a preheated oven 375 degrees. Watch them so they don't burn.

Allow to cool once done and then take off carefully with spatula. Allow to cool thoroughly on flat plates until ready to put into containers or on plates to serve.

1 cooky is 1 serving!
