Ingredients

1 1/2 cups All Bran
1/2 cup skim milk
1/2 cup fat free half and half
1/2 cup non sweetened applesauce
1 egg
1/2 cup brown sugar
1 tsp vanilla
1 cup whole wheat flour
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/4 tsp salt
1 1/2 cup fresh blueberries
Directions
Preheat oven to 375 degrees.
Lightly spray muffin cups with non stick spray or use muffin liners. This recipe makes 12 regular muffins or 24 mini.
In a bowl mix the All Bran with the milk and half and half. Let sit for 15 minutes until it is mushy.
In a mixing bowl, sift together the flour and baking power, baking soda and salt. Set aside.
In a mixer beat egg for about 30 seconds. Add applesauce, brown sugar and vanilla. Mix until combined. Add in the All Bran mixture beating on low for about 1 minute. Scrap down bowl and slowly add in the flour mixture mixing just until well combined. Mix in by hand the blueberries.
Spoon muffin mixture into the 12 (or 24) muffin cups. They will be very full.
Bake for 15-20 minutes or until top springs back when lightly touched.
