Ingredients

    4 ears corn on the cob, RAW
    2 medium tomatoes
    2 medium cucumbers
    ˝ red onion chopped
    Fresh Parsley
    ˝ cup of FRESH lime juice
    2 tsp canola oil
    2 tsp sugar
    salt & pepper to taste

    Cut corn from ears by standing the cob up on one side slicing downward. Chop tomatoes, cucumber and onion into bite size pieces. Finely chop parsley. Combine all ingredients into a large bowl. Meanwhile, whisk together lime juice, oil, sugar, salt & pepper in a small bowl. Pour dressing over salad and toss well. Enjoy.
