Ingredients

    1 can evap. fat-free milk
    2 eggs
    2 large sweet potatoes, baked, skin removed (enough for 2 cups mashed)
    1/2 c. sugar
    1/2 c. brown rice flour
    1 tsp. cinnamon
    1/2 tsp. ginger
    1/2 tsp. nutmeg
    1/2 tsp. salt
    2 tsp. baking powder

Directions

Mix milk, eggs, sweet potato until pureed. Add sugar flour, spices, salt, and baking powder. Blend slightly until mixed. Pour into large greased pie pan. Bake 1 hour. Makes own crust.
