Ingredients

    3/4 cup grated apples
    1/2 cup FF Cottage Cheese
    1/4 cup egg whites
    1/4 tsp cinnamon
    1/8 tsp nutmeg (optional)
    1/4 tsp salt
    1/4 cup unbleached white flour
    1 tsp baking powder, sifted
    1 tsp canola oil or use oil spray on your pan
    1 Tablespoon maple syrup

Directions

Peel, core, and grate the apples into a mixing bowl. Thoroughly mix in the cottage cheese, eggs, cinnamon, nutmeg, maple syrup, and salt. Sprinkle in the flour and sifted baking powder, and stir well. Butter or oil a heavy griddle or nonstick skillet and place it on medium heat. For each pancake, ladle 1/2 cup of the batter onto the kot skillet. When bubbles form on the tops and the bottoms are browned, flip the pancakes over and brown them on the other side. Serve immediately topped with maple syrup. (The additional maple syrup to serve these with is not included in the calorie count).

    Yuck! Heavy, chunky, didn't cook right, dry.
    I had such high hopes, too! Bummer! The flavor combination was good, it just didn't work out texture-wise.
