Introduction
I used this tomato sauce to bake some fresh salmon in - it was Tasty!!! I used this tomato sauce to bake some fresh salmon in - it was Tasty!!!Number of Servings: 6
Ingredients

* 3 red ripe plum tomatoes, diced
* 3 cloves of garlic, chopped
* 1 medium onion, diced
* 1 tbsp basil (dried) or 10 leaves fresh, chopped
* 2 tbsp extra virgin olive oil
* Salt to taste
Directions
* In a large skillet, heat olive oil on medium setting and add garlic
* Sautee until lightly brown
* Add onions
* Sautee until soft
* Add tomatoes, basil and salt
* Cook until a sauce begins to form, but tomatoes should still retain most of their shape
* If you choose to cook chicken/fish in the skillet, reduce heat to medium low (should still bubble slightly), add chicken/fish and cover to cook
* Cook with your usual timing, turning once in the middle
* You can also use this sauce to cover chicken/fish in a baking dish and cook in oven.
* I did this with salmon and cooked it (covered in tin foil) for about 20-25 minutes @ 400 degrees.
