Ingredients

    1 frozen ready to bake pie crust
    Filling:
    8 large fresh peaches, peeled and cut up
    3 tbsp fresh lemon juice
    3 tbsp minute tapioca
    1 tsp cinnamon
    1/2 c sugar
    dash salt

    Streusal topping:
    3/4 c flour
    6 tbsp cold butter cut up
    1/3c sugar
    1tsp cinnamon
    dash salt

Directions


Serving Size: 1 slice of 1 deep dish pie

Defrost frozen pie crust,
Blanch peaches, then peel and slice and put into bowl. Coat with lemon juice, sugar, cinnamon, salt, and tapioca.

In a separate bowl mix flour, sugar, cinnamon, salt, and mix. Cut in cold butter until it makes a lumpy streusal mixture.
Pre heat oven to 375, put peaches into pie crust, sprinkle struesal mixture on top. Bake for about 45 min to 1 hour until golden brown and bubbly.
Cool, serve warm with vanilla ice cream.

Note: I make my own pie crust when I am feeling really ambitious!
