Ingredients

2-3 canned chipotle chilies in adobo sauce, plus 1 Tbsp of the sauce
1 can (15 oz) diced fire-roasted tomatoes, drained
2 Tbsp extra-virgin olive oil
2-3 cloves garlic, finely chopped
1 lb medium-large shrimp, peeled and deveined
salt
1/4 cup chopped cilantro
Directions
Combine the chilies, sauce, and tomatoes in a blender and process until smooth.
Heat the oil in a skillet, add the garlic, and cook until golden and fragrant. About 1 minute.
Pour in the chili-tomato mixture and cook, stirring frequently until the flavors meld, about 5 minutes.
Add enough water (about 1.5 cups) to acheive a light tomato sauce consistency. Taste and season well with salt (about 1 teaspoon).
Add the shrimp and cook while stirring until cooked through. About 4 minutes.
If the sauce seems too think add water. Serve the shrimp sprinkled with cilantro.
