Ingredients

One 6 oz. package Farmhouse® Mexican Rice
1 cup chopped onion
1/2 cup chopped green bell pepper
2 Tablespoons butter or margarine
2 cups water
4 eggs
1 cup grated cheddar cheese
4 warm corn tortillas
1/2 cup prepared salsa
1/2 cup diced avocado
1/4 cup sour cream
1/4 cup chopped cilantro
Salt and pepper to taste
Directions
1.In a large skillet, sauté onions and green pepper in butter or margarine until onions are golden.
2.Add water, rice and contents of seasoning packet; bring to a boil.
3.Reduce heat, cover and simmer 15 minutes.
4.Make 4 small indentations in the rice mixture and gently break the eggs into the indentations. Cover and cook 5 minutes longer or until liquid is absorbed and eggs are just set.
5.Top with cheddar cheese; cover and let stand 5 minutes.
6.Divide mixture into fourths. Place each section on a warm tortilla and top with salsa, avocado, sour cream and cilantro. Season to taste with salt and pepper.
