A tangy marinade for chicken. A tangy marinade for chicken.
Number of Servings: 1

Ingredients

    1 chicken breast, no skin
    1 lime, juiced
    2 tsp fresh thyme, chopped fine
    1 clove of garlic, chopped fine
    1 tsp olive oil

Directions

Mix chopped garlic, chopped thyme and lime juice.
Trim any excess fat from the chicken breast and cut into three pieces. Cross cut.
Pour the herb mixture over the chicken and mix well. Marinate for 1 hour.
Saute' chicken in 1 tsp of olive oil on high heat for two minutes on each side.
Turn heat to low, cover and cook for 5 minutes.
Serve with green salad.

    I broke all the rules of this recipe and still loved it. I used Lemon juice instead of Lime, garlic powder instead of fresh garlic and dry thyme instead of fresh and I grilled it on the BBQ instead of frying it. - 5/20/09

    This was a great recipe! I used it as a marinade for the grill.
    I tripled the marinade ingredients and used it to marinate several pounds of chicken, which I grilled up and kept in the fridge. It was great cold sliced over a spinach salad for lunch!
