Introduction
I like to make these with vanilla flavored protein powder, but they can be made without it if you prefer. Just use additional whole wheat flour in the same amount as the protein powder. Ingredients

2/3 cup protein powder
1 1/3 cup whole wheat flour
2 tsp baking powder
3/4 tsp salt
1/4 tsp baking soda
1/2 cup shortening
1/2 cup splenda
2 large eggs
5 medium ripe bananas
2 Tbsp milk
Directions
In mixing bowl, combine all dry ingredients. Set aside. In large mixing bowl, cream shortening and splenda till fluffy. Add eggs and blend. In bowl, mash bananas. Mix milk in with bananas. Add 1/3 of the dry mix to the shortening mixture and mix well. Then add 1/2 of the banana mixture, then another 1/3 of the dry, then the rest of the banana, then the rest of the dry. Spoon into mini muffin pans. Bake at 350 for 8-10 minutes.
