Introduction

These are light and crisp, but hearty and healthy all at the same time! So good! These are light and crisp, but hearty and healthy all at the same time! So good!
Number of Servings: 14

Ingredients

    2 large eggs
    2 Tbsp ground flax seed
    6 Tbsp water
    1/2 cup unsalted butter, melted
    1/2 cup applesauce
    3 1/2 cups milk
    2 Tbsp sugar
    4 cups whole wheat flour
    1/4 cup cornmeal
    2 Tbsp + 2 tsp baking powder
    1/2 tsp salt

Directions

Heat your waffle iron. Soak the ground flax in the water. Beat eggs until fluffy, add butter applesauce and milk. Add all the dry ingredients. Mix slightly then add the ground flax/water. Mix until no dry spots remain.

Pour about 2/3 cup of batter on hot waffle iron. Close iron and cook until done. Mine takes a little less than 3 minutes, but I'm sure it varies.

Serve as soon as possible!
