Introduction

Number of Servings: 3

Ingredients

    1.5 lbs boneless skinless chicken breasts (I used tenderloins)
    1 T dried basil
    1/2 tsp salt
    2 tsp olive oil
    3 Roma Tomatoes, peeled and diced
    15-20 fresh basil leaves
    2 T feta cheese (optional)

Directions

toss chicken with dried basil and 1/2 tsp of salt or more to taste. *To peel tomatoes easily, boil a pot of water. Make an X in the bottom of each tomato and immerse in boiling water for approx. 30-50 seconds. Immerse immediately in an ice bath* Peel, seed and chop tomatoes. Set aside over a sink in a mesh sieve. Toss with 1/2 tsp salt. Chop Basil.
In the meantime, oil a grill pan with a MISTO and grill chicken until no longer pink, approx 4-5 minutes per side depending on your thickness. Let rest. Toss diced tomato with fresh chopped basil. Serve over *Creamy Polenta Pie* Top with Feta Cheese is desired.
