Number of Servings: 4

Ingredients

    1 TBSP Peanut Oil
    2 Medium Onions finely chopped
    2 Large cloves of Garlic, crushed
    1 Inch section of Ginger, peeled and grated
    1/2 tsp ground Cinnamon
    1/4 tsp ground Nutmeg
    2 tsp Garam Masala
    1 tsp ground Black Pepper
    1 tsp Medium Curry powder
    2/3 cup Greek Yougurt, Plain
    1/3 cup Lite coconut milk
    2/3 cup Chicken broth
    1 lb Chicken breast cut into bite size pieces

Directions

1. Sweat the onion in oil in a medium saucepan over medium heat for 5 minutes, or until soft and translucent.

2. Add the garlic and ginger, and heat for 2 minutes

3. Spoon 2/3 of the Onion mix into a Blender and blitz with 3 Table spoons of water, until a smooth paste is formed.

4. Return the paste to the onion mix, and add all spices. Cook for 2 minutes.

5. Add the yogurt 1 Tablespoon at a time, reserving 3 tablespoons for later. Add Chicken broth and Coconut milk and bring to a simmer.

6. Add the chicken to the curry mix, and simmer for 10-15 minutes or until the chicken is cooked through. (Do not boil, make sure the mix is kept at a simmer)

7. After the chicken is cooked, add remaining yogurt and serve.

Serving suggestion, with white rice, and steamed broccoli with lemon juice and salt to taste. (Calories listed are only for the chicken curry, will need to add for rice and sides.)
