Introduction

I adapted this recipe from allrecipes.com. You could use a whole can of soup and 2 packages of spinach. I am the only one in my house that eats spinach so a smaller amount works for me. Ingredients

    1/2 can cream of mushroom soup
    1 box frozen spinach
    1/4 c. onion, chopped
    2 garlic cloves, minced
    2 Tbsp. earth balance buttery spread
    salt & pepper

Directions

Defrost spinach and drain.
Saute onion and garlic until soft. Add in the cream of mushroom soup and cook until heated through. Add in the spinach and butter. Cook until all is well combined. Salt and pepper to taste.
