Ingredients

3 cups sliced peaches, plums, nectarines, apples, pears...
1/4 cup sugar
1 tbsp lemon juice
1/2 cup sugar
3/4 cup flour
1 1/2 tsp baking powder
1/2 tsp salt
3/4 cup low fat buttermilk
4 tbsp (1/2 stick) unsalted butter (do not use salted)
2 tbsp Sugar in the Raw or Demerara sugar
Directions
Preheat oven to 350 degrees.
Slice peaches (it's nice to leave the skins on. You can also use nectarines or plums or apples). Put peach slices in a shallow pan with sugar and lemon juice. Bring to a simmer and turn off.
Put butter in another small pan over medium heat. Swirl occasionally until a nice, nutty brown. Take off heat. Pour in an 8x8 pan and set aside. This is particularly nice in a cast iron pan, but watch the baking time as it will cook faster.
Mix flour, 1/2 cup sugar, salt and baking powder in a small bowl. Add buttermilk and stir until ingredients are just combined. A few lumps are OK. Pour this into the 8x8 pan and smooth gently. Do not mix with the butter.
Pour the sauteed fruit and accumulated juices over the batter. Do not mix in or stir. Sprinkle with Sugar in the Raw.
Bake in 350 oven for 45 minutes or until the top is golden brown. Serve warm.
