Introduction

Just a yummy salad with some protein! This would also be good with feta or mozzarella I'm sure. Note: This is NOT a low sodium recipe, although I'm sure there are ways to make it better! Ingredients

    1 C baby spring mix or other salad greens
    4 cherry tomatoes
    1/8 C shredded/grated carrots
    1/8 C (or half of a small can) sliced black olives
    1/8 C shredded provel cheese (I used Imo's brand, I'm sure any cheese would be good)
    About 3 slices reduced fat hard salami, cut or ripped into small pieces
    2 T light creamy Italian dressing (I used Fortel's brand)
