Introduction

This is my families favorite soup This is my families favorite soup
Number of Servings: 10

Ingredients

    6-8 medium size baked pototoes
    1 medium onion finely chopped
    2 T. butter
    6 cups chicken stock (1/2 cup reserved)
    2 Cups half-and-half
    4 T. cornstarch
    Garnish: shredded cheddar cheese and bacon

Directions

1. In a large pot saute onion in butter until soft. Add chicken stock, salt & pepper, and potato pulp.
2. Stir in half-and-half and heat to near boiling.
3. Take reserved chicken stock and add 4 T. of cornstarch. Blend well to remove lumps and add to boiling soup. Keep stirring until soup has thickened.
4. Garnish soup with cheese and bacon,
