What makes this a double salad is that it is two salads in one.This chicken and blue cheese salad is dressed with a left over marinated cucumber, tomato, and onion salad that we have with our dinner during the hot summer months. Ingredients

Blue Chicken Salad
----------------------------
2 cups Mixed greens (prefer spinach and arugula mix)
3 oz. grilled chicken (leftovers from dinner work great!)
1 tablespoon blue cheese crumbles
Marinated Salad (This is what makes the dressing!)

1 roma tomato
1/2 a small pickling cucumber
1/8 cup of diced onion
salt, pepper (to taste)
1 tablespoon Cider Vinegar
1 teaspoon olive oil
Directions
Place greens on plate, top with shredded chicken, and crumbled blue cheese.
In a small bowl mix together one chopped roma tomato, one 1/2 chopped small cucumber, one 1/8 cup of diced onion, 1 tablespoon of cider vinegar, and 1 teaspoon of olive oil. Salt and pepper to taste. Mix well.
Pour marinated salad over top the greens, chicken, and cheese. ENJOY!
