What makes this a double salad is that it is two salads in one.

This chicken and blue cheese salad is dressed with a left over marinated cucumber, tomato, and onion salad that we have with our dinner during the hot summer months. Feel free to whip up the ingredients for the marinated salad as you are making the Blue Chicken Salad if you don't already have it on hand.

Ingredients

    Blue Chicken Salad
    ----------------------------
    2 cups Mixed greens (prefer spinach and arugula mix)
    3 oz. grilled chicken (leftovers from dinner work great!)
    1 tablespoon blue cheese crumbles

    Marinated Salad (This is what makes the dressing!)
    ------------------------
    1 roma tomato
    1/2 a small pickling cucumber
    1/8 cup of diced onion
    salt, pepper (to taste)
    1 tablespoon Cider Vinegar
    1 teaspoon olive oil

Directions

Place greens on plate, top with shredded chicken, and crumbled blue cheese.

In a small bowl mix together one chopped roma tomato, one 1/2 chopped small cucumber, one 1/8 cup of diced onion, 1 tablespoon of cider vinegar, and 1 teaspoon of olive oil. Salt and pepper to taste. Mix well.

Pour marinated salad over top the greens, chicken, and cheese. ENJOY!
