Ingredients

    4 orange roughy filets
    2 tbsp. olive oil
    2 cloves garlic, minced
    1 med. onion, minced
    1/2 tsp. salt
    1/4 tsp. cracked pepper
    3 tbsp. chopped basil
    2 c. chopped fresh tomato
    Juice of 1/2 lemon

Directions

Sauté onion and garlic in oil until soft. Add remaining ingredients. Simmer until fish is done.

Brush fish with oil and lemon. Season with salt and pepper. Grill 4 to 5 minutes per side. Garnish with sauce.
