Introduction

Ingredients

    1 c dry green lentils + 2 cups water for cooking
    1 c dry couscous + 1 1/4 c water for cooking
    1 red bell pepper diced
    1/3 c red onion diced
    1 celery stalk diced
    2 cloves garlic minced
    3 tbsp fresh dill (or I used dill paste)
    1-2 tbsp of fresh mint
    1/4 c fresh parsley
    1-2 tbsp of olive oil
    1 tsp salt
    1/4 c lime juice (juice from 1 lime)
    lime zest
    pepper to taste

Directions

Rinse lentils and clean them of any soil. Heat them in a pot with 2 cups water until boiling. Then keep covered and simmer for 10-15 minutes. (Don't let them get too soft so check after 10 minutes.)
Heat 1 cup water until boiling then add couscous, cover, and remove from heat. Set aside for 5 minutes for the couscous to absorb water.
As for all over ingredients, chop finely and add to large bowl. Mix well with lentils and couscous. Allow this to sit for awhile for all the flavors to marinade.

I calculated calories at 1 cup servings but as a side dish, a 1/2 cup should be enough.
