Introduction

Ingredients

    1 package of Trader Joe's chimichurri rice
    1 can of black beans
    1 cup corn

Directions

- Preheat oven to 400 degrees.
- Spray a cookie sheet with cooking spray.
- Heat 1 tblsp of oil in a large pan.
- Add chimichurri rice, beans and corn and cook until rice is done
- Fill a small cup with water
- Turn egg roll wrappers diagonally (looks like a diamond) and spoon about two tablespoons of the rice mixture into the egg roll wrapper. (*Note: you can add cheese on top at this point, which I did to a few). Fold bottom edge up over the mixture, tuck in the sides and roll up. Seal the wrapper with a little water and place on the prepared cookie sheet.
- Brush the egg rolls with a little oil and bake for about 15 minutes.

- Heat just enough oil in a large skillet to cover the bottom of the pan.
- Take baked egg rolls and fry about 30 seconds on each side in hot oil.
- Drain
