Ingredients

    1 tbsp Olive Oil
    1 small onion, chopped
    2 cloves of garlic, minced
    1 8oz can pineapple tidbits
    2 cups cubed ham
    4.5 cups cooked brown rice (use the 6 serving recipe on the side of minute brown rice)
    2 eggs, scrambled
    2 tbsp tamari (soy sauce)

Directions

Heat the olive oil in a large skillet on medium heat. Add onions and garlic and saute for about 5 minutes. Add ham and the juice from the can of pineapple and cook for about 5 minutes. Add the cooked rice and pineapples and cook for another 5 minutes. Meanwhile scramble 2 eggs in another small skillet. Add them to the rice mixture. Stir in the tamari (soy sauce) and serve.
