Introduction

Ingredients

    1 medium onion, chopped
    ½ red bell pepper, chopped
    1 cubanelle pepper, seeded and diced
    4 medium garlic cloves, minced
    2 cups canned diced tomatoes
    ½ cup fish or vegetable broth
    2 tbsp sliced green olives
    2 tsp brined capers, drained
    1 ½ pound sea bass, quartered

Directions

Sauté onion and peppers 7 minutes in a large non-stick pan.
Add garlic and cook 1 minute more.
Stir tomatoes, broth, olives and capers into onion mixture and heat to simmer.
Arrange fish in skillet. Cover and cook 8 to 10 minutes.
To serve, remove fish to plates and spoon tomato and olive mixture over fish.
