Ingredients

    2 cups flour
    1 tsp salt
    3 tsp baking powder
    2 tsp sugar
    2 eggs
    2 cups milk
    1 tsp vanilla extract
    1 tbsp oil (don't forget the oil! this way your pancakes will not stick to the pan) I use grapeseed oil to lower the fat.

Directions

Sift dry ingredients together in a small bowl.
In a medium-sized bowl whisk together wet ingredients. Add dry ingredients to wet and mix until smooth.
Drop a ladle full of batter onto a hot (375F) griddle or frying pan (no oil, butter or cooking spray!). Wait until bubbles appear and pop, then flip. Adjust timing to your liking of darkness (this timing makes them golden-brown).

Serving Size: makes 8 medium-large pancakes (1 serving = 2 pancakes)
