Ingredients

10 ml oil
130 g unsweetened applesauce
1 C natural pineapple juice
vanilla
1 ml liquid stevia extract
2 C oatmeal
1/2 C ground carob
1.5 tsp baking soda
1 tsp salt
2 C shredded zucchini
Frosting:
6 tbs ground carob
1/4 C margarine
1/2 C dark brown sugar
1/4 C milk
Directions
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
2. Cook vanilla in pineapplesauce for 10 mins, let it cool.
3. In a large bowl, mix together the oil, unsweetened applesauce, stevia and slightly cooled pineapple juice.
4. Combine the flour, 1/2 cup ground carob, baking soda and salt; stir into wet ingredients. Fold in the zucchini. Spread evenly into the prepared pan.
5. Bake for 25 to 30 minutes in the preheated oven, until brownies spring back when gently touched.
6. To make the frosting, melt together the 6 tablespoons of ground carob, margarine and brown sugar; add milk. Stir well until the texture is smooth. Spread over cooled brownies before cutting into squares.
