Ingredients

    1/2 cup of amaranth grain
    1.5 cup of vegetable broth
    1.5 Tbsp of Herbes de Provence
    1 tsp of garlic powder
    1 tsp of onion powder
    1 tsp of kelp powder (salt substitute)
    1 Tbsp of margarine

Directions

Bring broth and spices to boil in medium stockpot. Add amaranth, reduce heat to medium-low. Add margarine. Simmer for 25 minutes or until all broth is absorbed. Serve hot.
