Ingredients

4 slices whole-wheat bread
1 T reduced-fat mayonnaise
1/2 avocado, mashed
1/2 cup tuna packed in water, drained
1 cucumber, cut into strips
Directions
Remove crusts and, with a rolling pin, gently roll bread to flatten slightly. Along the middle of each slice spread a little mayonnaise and avocado. Top with Place long, thin strips of cucumber on top and roll tightly. Cut in thirds, turn up and place into lunchbox for later.
Optional: Use a variety of breads to keep them interesting.
Other yummy fillings:
Cream cheese, salmon and thin slices of cucumber
Ham, cheese and finely shredded lettuce
Cottage cheese, thinly sliced carrot and raisins
Peanut butter and thinly sliced carrot
Egg and lettuce
Tuna, mayonnaise and finely shredded lettuce
Curried egg
Avocado, shredded chicken and cheese
For a sweeter variety do the same as above but use fruit or raisin loaf slices and fill with the following;
Strawberry jam and cream cheese
Peanut butter and honey
Mashed banana
Peanut butter and mashed banana
Nutella and grated apple
Pineapple
Peanut butter and strawberry jam
Cottage cheese, jam and raisins
