Ingredients

1 1/2 cups boiling water
3/4 cup uncooked bulgar
3 medium tomatoes, chopped (about 2 1/4 cups)
8 medium green onions (scallions) chopped (about 1/2 cup)
1 medium green bell pepper, chopped, (1 cup)
1 cup chopped cucumber
3/4 cup chopped fresh parsley
3 tbsp chopped fresh mint
1 - 15oz can garbanzo beans drained
1/4 cup lemon juice
1 tbs olive oil
3/4 tsp salt
1/4 tsp black pepper
3 cloves garlic, finely chopped
Directions
Pour boiling water over the bulgar in medium bowl. Let stand 1 hour.
Combine lemon juice, olive oil, salt, pepper, and garlic to make a lemon-garlic dressing.
After bulgar has soaked, drain all water from bowl. Stir in all ingredients mixing well, add the lemon garlic dressing last.
Shake all ingredients together in a tightly sealed container before serving.

This is so delicious!!! I did make a few substitutions because of what I had on hand. I used 6 oz of farro (cooked and cooled) instead of bulgar. I used 1 1/2 tsp of dried mint. I used green AND yellow pepper. Cilantro instead of parsley. Added a little bit of feta when serving. Loved it!! - 11/16/13
