Introduction

Ingredients

2 tbsp olive oil
1 medium onion, chopped
500g minced beef
1 medium courgette
1 400g tin chopped tomatoes
lasagne sheets (about 6)
1 pint semi-skimmed milk
1.5 tbsp corn flour
3oz cheddar cheese, grated
Directions
put the oil in a large pan and add the chopped onion and courgette
cook until soft, then add the minced beef.
Cook until brown, then add the tomatoes.
bring to the boil, then simmer until sauce thickens (about 10 minutes)
Mix the corn flour with 3 tbsp of the milk to form a thick paste.
Bring the milk to the boil then add the paste. Simmer until thickened. Add in 20z of the cheese and stir until it has melted.
layer lasagne sheets, meat sauce and cheese sauce, finishing with cheese sauce, and sprinkle the remaining cheese on the top.
Cook on gas mark 5 for 25-30 minutes until the pasta is soft, and the top is browned.
Serve with salad.
