Ingredients
-
LEMONGRASS - not parsley (they didnt have it on spark's ingredients, so I put parsley instead as it is comparable in nutrients etc)
Spring onions (not white onions)
Prawns raw, peeled
1 egg, raw
Won ton (dim sim) wrappers (square sheets of pastry)
Bread crumbs
Coconut milk/cream (depending on your diet requitements)
Directions
De-frost the won ton sheets at room temperature while you prepare their filling.
Cut the prawns up into very small pieces (dont add tails), add cocnut milk, egg, spring onions, and finely cut fresh lemongrass. Mix together with bread crumbs until it forms a thick paste (think meatball texture).
Place one teaspoon of mix on top of each won ton sheet and fold over nicely to shape and enclose filling by using a fork and water to close pastry folds.
Place dim sims in a large pot of boiling water for 1 minute each and then serve hot!
