Introduction

I love this served as a side dish along with a pan-seared chicken breast, pork chop or salmon. I love this served as a side dish along with a pan-seared chicken breast, pork chop or salmon.

Ingredients

    1 cup barley, pearled, raw
    2 cups boiling water
    1 can yellow corn, kernels, drained and rinsed
    1 can black beans, drained and rinsed
    1/4 cup red onion, chopped
    6 cherry tomatoes, cut in half

    Dressing:
    2 Tbsp. canola oil
    3 Tbsp. cider vinegar
    1/4 cup honey
    3 Tbsp. spicy mustard

Directions

Cook barley in boiling water per package instructions. Cool and rinse. Add remaining ingredients. Prepare the dressing ingredients in a blender. Pour dressing on barley combo and gently toss. Enjoy!
