Introduction

A non-diet banana bread that is so good for an occasional splurge. A non-diet banana bread that is so good for an occasional splurge.
Number of Servings: 12

Ingredients

    1/3c butter flavored crisco
    1/2c sugar
    2 eggs
    1c whole wheat flour
    3/4c AP flour
    1 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1c mashed banana
    3/4c chocolate chips (or nuts)

Directions

Preheat oven to 350.
Cream shortening and sugar. Add eggs and beat well.
Sift together dry ingredients.
Add to creamed mixture, alternating with mashed bananas, blending well after each addition.
Stir in chips.
Pour into greased 9" loaf pan (or 12 muffin tin)
Bake for 45-50 min (25-28 for muffins) or until toothpick inserted comes out clean.
Cool in pan for 5-10 min, then remove to baking rack to cool completely.
Slice into 12 servings.
