This is from The Mediterranean Diet by Nancy Harmon Jenkins. I modified it a bit because I have a lot of fresh mint (she uses dried) and I wanted a bit less oil. This makes about 2 cups. Ingredients

    1 cucumber peeled, seeded and chopped (1.5 cups yield)
    2 garlic cloves pressed
    1 tsp salt
    1 tbsp white wine vinegar
    1 tbsp extra-virgin olive oil
    1 1/2 cups nonfat greek yogurt (I use Fage)
    2 tbsp fresh mint leaves chopped

Directions

Peel, seed and slice the cucumber into small cubes. Place in a bowl, add salt and set aside for 15 minutes to draw out moisture. Crush the garlic cloves in a garlic press into a bowl large enough to hold sauce. Add salt, vinegar and olive oil and stir. Chop the mint fine. Add the mint and yogurt. I rinse the cucumbers in a strainer to remove the excess salt and remove the water before adding them to the yogurt mixture. Stir and enjoy. I put the mixture in the fridge for an hour or two before eating.
