Yummy Italian Veggie Salad Yummy Italian Veggie Salad
Number of Servings: 8

Ingredients

    1 red bell pepper (large dice)
    1 yellow bell pepper (large dice)
    1 orange bell pepper (large dice)
    1 english cucumber (seeded) halved and sliced
    1/2 cup thin sliced red onion
    1 can small black olives
    1 4-oz diced hard salami
    1-6oz container reduced fat feta cheese
    1-cup cherry tomatos halved
    1 bagett-cut into crouton size (baked with Pam and garlic seasoning)
    1/2 cup olive oil
    1/2/ cup red wine vinegar
    1-2 TBS dry oregano seasoning
    dash of lemon juice

Directions

Cut up all veggies and place in large serving bowl
add fetta cheese, drained olives, salami, and croutons. Toss in bowl. Mix olive oil, vinegar, lemon juice, and oregano in jar, Shake well and pour over salad mix and toss. Serve immediatly at room temp. Can do ahead but do not mix in croutons and dressing until served.
