Ingredients

    Ground beef, lean, 5 oz
    Milk, nonfat, 2 cup
    *Flour, white, .25 cup
    *Onion powder, 1 tsp
    Garlic powder, .5 tsp
    *Creole Seasoning, Tony Chachere's, 0.25 tsp

Directions

Cook ground beef and drain, reserving liquid and fat. Refrigerate the fat until it separates (overnight is easy). Measure 2 T of the fat and discard the rest. Reserve jelly and beef juice for gravy.

Melt fat in 10-inch frying pan. Add flour and stir constantly for 5 - 10 minutes or until brown and fragrant. Add milk all at once and use whisk to incorporate liquid into the roux (cooked flour and fat mixture). Add remaining jelly and drippings from ground beef, garlic and onion powder and Tony Chachere seasoning. Cook until bubbly and thick, approximately 20 minutes. Serve over noodles, rice, potatoes, or biscuits.
