Ingredients

    1 medium egg
    1/4 cup brown sugar - packed
    1/2 cup unsweetened applesauce
    1 cup cooked pumpkin
    1 teaspoon vanilla extract
    2/3 cup unsweetened almond milk
    1 cup whole wheat flour
    1 cup oats
    1 tsp baking powder
    1/2 teaspoon salt
    1 teaspoon cinnamon
    1 teaspoon cinnamon
    1 teaspoon ground ginger
    1/2 cup walnuts - chopped
    1/4 cup dates - chopped

Directions

Mix wet ingredients - applesauce, pumpkin, almond milk egg , vanilla extract until well mixed. Mix in brown sugar. Combine dry ingredients - flour, oats, baking powder, salt, and spices. Stir until mixed. Mix dry ingredients into wet ingredients. Stir in walnuts and dates. I think these are best when baked in a nonstick muffin pan or silicone muffin pan because you get more of a crust than if you bake in baking papers. Preheat oven to 350 - bake 20-25 minutes - until the middle is done. I like to keep this in the freezer and reheat in a toaster oven for a treat at breakfast.
