Ingredients

    6 medium baked potatoes
    1 Tblsp olive oil
    salt & pepper
    1 pound ground turkey
    1 pkg. taco seasoning
    6 oz greek yogurt,plain
    2 scallions,sliced
    1 plum tomato,chopped

Directions

Halve baked potatoes & scoop out the middle. Brush halves with olive oil.Season with salt & pepper. Bake at 350 for 30 mins. While potatoes are baking cook ground turkey & follow directions from taco seasoning pkg.
Place 2 tblsp ground turkey into each potato skin.Top with 1/2 tblsp shredded sharp cheddar place back in the oven for 5-10 min to melt cheese. Top with yogurt,scallions & tomato
