Number of Servings: 4

Ingredients

    1.5lbs Chicken thighs, boneless, skinless
    2 TBS (or to taste) curry powder (red or yellow)
    1 Cup Chicken Broth
    1 TBS Corn Starch

    2 Cup Prepared Brown rice

Directions

Cut the chicken thighs into bite size pieces, removing any easy-to-remove excess fat. Place chicken into a medium-sized pot and cook for approx 5 min. Stir in chicken broth and curry powder. Allow to simmer for 15-20 min to reduce broth. Whisk corn starch with a little of the cooking liquid and then add to the pot. Allow to thicken. Serve over brown rice with Sambal Oolek for an extra KICK!

    We are new to Curry and found that two tbs of curry was too much. We halved that and really enjoyed it with a vegetable rice pilaf. - 1/21/08
