Ingredients

1 tsp ground cumin
1 tsp ground coriander
1/2 tsp paprika
1/2 tsp red pepper
1/8 tsp garlic salt
*Cooking Spray, Pam
Shrimp, raw, 8 oz
Onions, raw, 1.5 cup, chopped
Green Peppers (bell peppers), 1.5 cup, strips
Mushrooms, fresh, 1 cup, pieces or slices
Sour Cream, reduced fat, .25 cup
*corn tortillas (4 tortillas)
*Old El Paso Vegetarian Refried Beans, 2/3 cup
Salsa, .5 cup
Chopped Cilantro-1 small bunch
Directions
Combine seasonings in small bowl and set aside.
Spray pan with Pam Cooking Spray and cook shrimp-until pink and opaque. Set aside shrimp.
Spray large skillet with Pam and saute over medium high heat onions, peppers, mushrooms-add spices. Cook for about 5 minutes. Add shrimp and cook for another minute or two until everything is hot.
Heat refried beans and serve on the side of veggies and shrimp.
Serve with 2 tortillas per person. Cook tortillas in microwave wrapped in damp paper towel until warm--SO NOT OVERHEAT tortillas.
Serve with salsa, sour cream and chopped cilantro.

I made this tonight for dindin. The only reason I gave it 5 stars is bc I added a pkg of taco seasoning mix from Taco Bell. (I would have added Taco Bell Fajitaseasoning but I didn't have it). I actually was surprised at the texture and flavor, after I added the seasoning. Definitley a keeper! - 6/4/19
