Ingredients

    1 lb. fresh brussels sprouts, trimmed and halved
    1 Tbsp extra virgin olive oil
    1 tsp kosher salt, divided
    1/4 tsp black pepper, freshly ground
    1 1/2 Tbsp balsamic vinegar
    1 Tbsp sugar free, maple flavored pancake syrup

Directions

Preheat oven to 450ºF. Coat a large nonstick baking sheet with cooking spray.

Trim stems from brussels sprouts and slice in half. Place in medium sized bowl and add oil, 3/4 tsp salt and pepper; toss well to coat.

Roast, stirring and rotating pan halfway through cooking, about 20 minutes

Meanwhile, combine vinegar, maple flavored syrup, and remaining 1/4 tsp salt in a small saucepan; set over medium-high heat. Boil, stirring frequently, until mixture thickens.

Spoon Brussels sprouts into a serving dish; drizzle with syrup mixutre just before serving.
