Introduction

I first made this when I was about 17 and I had decided to become a vegetarian. When the recipe called for "garlic cloves," I had no idea what that meant. I knew about garlic and I knew about the spice called "cloves" but didn't know garlic came in "cloves." So -- I just added both. Eventually, of course, I learned what was meant, but by that time, I'd grown used to the clove taste!

The original recipe also called for the lentils to be put into a blender or food press, too, and that does make for a nice sauce, but being lazy, I normally leave them whole.

Number of Servings: 8

Ingredients

    3/4 C onion, chopped
    1 T olive oil
    1-1/2 C dried lentils
    4 C water
    1/2 t pepper
    1/4 t cayenne
    1 can Italian diced tomatoes
    1 can (tomato paste
    1 t white vinegar
    1 1/2 t dried basil
    1 1/2 t dried oregano

Directions

Heat the olive oil in a large sauce pan; saute and garlic.

Add lentils, water; Bring to a boil.

Reduce heat; cover and simmer for 25 minutes.

Stir in the tomatoes, tomato paste, vinegar, pepper, cayenne, oregano and basil. Return to a boil.

Cover; reduce heat and simmer for an additional 45 minutes.

Serve over spaghetti or egg noodles. Pasta not included in the nutritional information.

Serving Size: Makes 8 servings of approximately 3/4 C
