Introduction

Ingredients

    1 English cucumber, diced to "kernal" size
    1 avocado, diced
    1 large tomato, diced, including all juices
    1 small red pepper, diced
    1/2 small red onion (optional)
    1 cup frozen corn (yellow & white)
    2 T cilantro
    1 freshly squeezed juice of lime
    2 T soy sauce

Directions

Dice all fresh vegetables to small dice. Mix vegetables together with frozen corn. Add lime juice and soy sauce (or use equivalent amount of ponzu). Toss. Add salt and pepper to taste.
