Ingredients

    2 T. Canola Oil
    2 lb. Pork Tenderloin Roast, trimmed of fat
    2 Medium Onions, raw, chopped
    5 Cloves Garlic, minced
    1 Jalapeno Peppers, minced
    1 Anaheim green chile, minced
    1 C. Green Tomatillo Salsa
    0.5 C. Low Fat Low Sodium Chicken Broth

Directions

Heat oil in a large skillet and brown all sides of the pork loin roast. Remove from pan and place in slow cooker. Season roast all over with salt and pepper. In the same pan, cook onions, jalapeno and Anaheim chiles, and garlic with a pinch of salt until soft. Add vegetables to the slow cooker. Add tomatillo salsa and chicken broth to the crock, cover and cook on LOW 6-7 hours or until the center of the roast is 165F when measured with a meat thermometer.

    Very Good
    DH and I made this as is and it was delicious. Later DH cooked it with chicken instead of pork and shredded the chicken to make nachos for a party. Our guests loved it! - 7/28/13
