Ingredients

8 large Idaho potatoes peeled and chopped
1 medium onion chopped
2 cups diced lean ham
1 tablespoon salt
1 16oz container of Breakstone reduced fat sour cream
1 2 cup package of kraft 2% shredded cheddar cheese
Directions
peel and chop potatoes into half inch or so sized pieces and put in large pot
chop onions finely and add to pot
add chopped ham to pot
add water to pot till potato mixture is covered
add salt to water
bring water to boil and cook for 20 to 30 mintues
remove from heat and smash some potatoes with back of spoon or fork, for chunkier soup don't smash many potatoes or if you like your soup smoother you can smash them all
stir in cheese and sour cream and serve
This recipe can also be made in a crockpot and cooked on low for 6 hrs or untill you're home from work. The stove way is quicker if you're short on time.
