Number of Servings: 6

Ingredients

    2 full chicken breasts, diced (I use the rotisserie chickens with skin removed for flavour)
    1 medium apple, diced
    1 medium stalk celery, diced
    1 cup grapes, halved
    1/2 cup Hellman's Light Mayo
    1/2 cup chopped walnuts
    1/4 cup raisins
    1/4 cup scallions
    1/4 cup sunflower seeds
    juice from one lemon
    salt & pepper to taste

Directions

Dice all ingredients and mix in a large bowl. To lighten up the recipe, you can half the mayo with Greek yogurt. A couple tablespoons of orange juice is also a nice addition.

Serving Size: Makes 6 Servings

    This recipe is good as is although I did use the Greek yogurt for 1/2 the mayo. My hubby loves it and I thought I wouldn't because I loved the regular recipe. But I found I love this one just as much if not more!! Thanks for sharing!! - 3/24/12
