Introduction

A pumpkin cookie, not overly sweet, that is good for snacking. A pumpkin cookie, not overly sweet, that is good for snacking.
Number of Servings: 26

Ingredients

    4 Tbsp Light Margarine
    1/4 cup honey
    1 Tbsp water
    1 tsp vanilla
    1 cup canned pumpkin
    1 cup unbleached white flour
    1/2 cup wheat germ
    1/2 cup rolled oats
    1 tsp baking soda
    1 tsp cinnamon
    1/2 tsp ginger
    1/2 tsp nutmeg

Directions

Preheat oven to 350 F. Spray a cookie sheet with cooking spray. In a large bowl combine margarine, honey, water, and vanilla. Beat on low, then add pumpkin and mix until well combined. In a separate bowl combine dry ingredients. Add to pumpkin mixture and stir until well blended. Drop batter by spoonfuls (about 1/2 Tbsp) onto prepared cookie sheet. Bake 12-14 minutes.
