Ingredients

    6 Red Potatoes, small 2", quartered
    2 C Diced cabbage
    2 C Diced Mustard Greens
    1 Small Onion, diced or how you like it
    3 Sticks of Celery sliced thick to thin
    1 Cube Vegetable Bouillon
    3 T Olive Oil
    1 T Parsley Flakes
    Pepper to taste
    Allspice, scant
    Garlic Powder to taste

Directions

Puree the whole can of stewed tomatoes first. Saute the onions until clear in the Olive Oil. Then add All Ingredients to the pot, then adding enough water to barely cover. Don't add any salt to this recipe - the salt is in the bouillon and canned tomatoes! Bring to boil, then simmer, adjusting your spices a little bit by the taste of the broth until Potatoes are soft. Reheat or add water as much as you like; the soup gets better and more like a thick stew as the potatoes and greens blend with simmering.
