Ingredients

    1 ½ cup arugula leaves, stemmed and gently torn
    1 ½ cup baby spinach leaves
    6 marinated artichoke hearts, drained
    ¼ cup thinly sliced scallions

Directions

1. Combine arugula, spinach, scallions and artichokes. Toss gently.
2. Serve with olive oil of your choice and season to taste with salt and freshly ground black pepper.
